Like what was Legolas's full title, where did he come from? Or why were the elves leaving middle earth? Where were they going? Why is lady Galadriel more powerful than most? And where do all these eagles keep on popping up from? Who calls/sends them?

Legolas Greenleaf, son of Thranduil King of the elves of Mirkwood.

As for why the eldar and the elves are leaving middle earth, read the Quenta Silmarillion by Tolien yourself.

And the lady Galadriel is the only surviving actual child of one of the Noldor who came with the Feanor...I think she was actually one of feanor's kids. That's a whole different ball game, being a direct kid. (Tolkien may have taken the idea from the b'nei Elohim the Torah mentions at the end of parshas bereishis, being children of malochim who were the nefilim, having special powers that dissipated in their children.)
